The Seven-Year Journey

Hatchery

Eggs from certified broodstock are incubated in pristine spring water with monitored survival rates.

Y2–3

Juvenile Growth

Fingerlings move to open rearing pools. Diet, temperature and flow are tuned each season.

Maturation

Adults develop roe sacs. Annual ultrasound tracks maturity; only seven-year fish are selected.

First Harvest

Roe is hand-extracted, rinsed, graded, lightly salted (malossol) and tinned within 48 hours.
